This is a family recipe for a light, pure tasting banana bread.
Prep time: 10 mins
Bake time: 55-65 mins
What you’ll need:
2.5 cups flour
.5 cup granulated sugar
.5 cup brown sugar
3.5 teaspoon baking powder
1 teaspoon salt
3 tablespoons vegetable oil
1/3 cup milk or soy milk
2-3 mashed bananas
1 egg
What to do:
Preheat oven to 350F. Grease the bottom and sides of a 5″ x 9″ (1.5 quart) loaf pan. Mix all ingredients, pour into pan.
Bake 55-65 minutes.
Makes 1 loaf.
This is vegetarian. Can be made vegan: exclude egg, use soy milk (as indicated plus 1/4 cup), add 1/2 teaspoon more baking powder.
